Salsas
Chef Michael Goleniak has extended his culinary reach by offering an all new My Personal Chef Black Bean
and Corn Salsa. The following recipes are just a few ideas of how you can take your MPC brand salsa
to the next level!
Vegetarian Burritos
Ingredients:
- 1 container of MPC brand black bean and corn salsa
- 1 package of tex mex rice
- 1 avocado
- 1 package of cheese (monterey jack, cheddar, pepper jack etc.)
- 1- 8ct package of burrito wraps
Process:
Prepare the rice according to the box directions. When done, mix with the
MPC brand black bean and corn salsa.
Scoop a small amount onto burrito wrap and top with two slices of avocado and some shredded cheese.
Roll to enclose the filling and place all eight into a baking dish.
Top with remaining cheese and bake at 350º for 20-25 minutes.
Blackened Tuna Over Black Bean and Corn Salsa
Ingredients:
- 2-4 Tuna steaks
- Favorite blackening spice
- 1 container of MPC brand black bean and corn salsa
Process:
Coat the fish with the blackening spice and grill or pan sear.
Scoop the MPC brand black bean and corn salsa on center of a platter.
Arrange the fish around it and serve.
South West Black Bean, Corn and Spicy Sausage Soup
Ingredients:
- 2- 15 oz. cans of black beans
- 1- 15 oz. container of diced tomatoes
- 1 container of MPC brand black bean and corn salsa
- 1 lb. spicy Chicken or Pork sausage
- 2 T. ground Cumin
- Water
- Salt and Pepper
- Sour Cream
- Tortilla chips
Process:
Remove the sausage from the casing and sauté until done.
Drain the grease and add the sausage, black beans, MPC brand black bean and corn salsa,
tomatoes and cumin to a soup pot. Add enough water to just reach the top and bring to a boil.
Add salt and pepper to taste. Blend together with a stick blender or a
regular blender until thick, but still chunky.
Serve:
Pour into soup bowls and add a dollop of sour cream in middle and tortilla chips around edge of the soup.
Serve cold to cure hot summer days, or hot to warm you up in the winter.
